The dressing resembles a blue cheese vinaigrette and not a traditional creamy cesar. But the flavor is perfect for the wraps of the same name.
Cesar Salad Dressing
1 extra large egg
2-6 cloves garlic, finely minced
½ cup canola oil
¼ cup lemon juice
¼ cup red wine vinegar 3 inch ribbon anchovy paste or 1 T. worcestershire sauce
2 t. dry mustard
½ t. kosher salt
¼ t. pepper
¾ cup crumbled blue cheese
1½ cups fresh grated parmesan cheese
Mix all ingredients except the blue cheese and the parmesan cheese until smooth. Add in the blue cheese and parmesan and stir to combine. Refrigerate at least 4 hours before use.
